weekly Market Update

Make sure to place your orders for the market. We've got lots of fresh organic produce, raw cow and goat milk. pastured chicken and duck eggs, chicken, and pork (think bacon!), grass-fed beef, as well as local honey. We also have lambs quarters which is a wild green! Don't know what that is? Check out this week's recipe below!

Our garden is coming along, the squash is doing great, we've also planted some okra this week and sunflowers which are starting to grow!

Our campers had a blast last week at camp and we've got another coming in July. One parent said her son had so much fun she was going to sign him up again! Join us for a summer of fun-filled learning where kids will experience life on a real working farm!

Our next camp is July 11-13
Campers are divided into 2 age groups; 4-6 yrs. and 7-12 yrs.
Camp is held each day from 8:30 am. to 12:00 pm.
The cost for the three-day session is only $99

Lamb's quarters are incredibly nutritious. They are high in fiber and protein and is loaded with both Vitamins A and C. The plant is also high in manganese, calcium, copper and has a bit of iron, and is high in both Omega-3 and Omega-6 fatty acids.

Sauteed Lamb's Quarters

Ingredients:
2 tablespoons extra virgin olive oil
2 cloves garlic, peeled and smashed with the side of a knife
1⁄3 cup dry breadcrumbs
2 anchovy fillets finely chopped
5 cups lamb's quarters leaves, washed and dried
Kosher salt and freshly ground pepper
1⁄2 teaspoon lemon zest
Lemon juice, to taste
