There continues to be much debate about whether meat and its production are good for us and the environment. In her piece, Meat is Magnificent: Water, Carbon, Methane and Nutrition, Diana Rodgers makes the case that meat which is raised, prepared, and paired with other foods correctly deserves a place on the podium.

"There was a recent article in The Washington Post entitled "Meat is Horrible", once again vilifying meat, that was full of inaccurate statements about the harm cattle impose on the land, how bad it is for our health, and how it should be taxed. Stories like this are all too common and we've absolutely got to change our thinking on what's causing greenhouse gas emissions and our global health crisis!
Paniolos (Hawaiian Cowboys) would dry strips of beef in the sun, to chew on while driving cattle; this food was eventually named Pipikaula (literally "beef rope"). To flavor the beef, they would use soy sauce, as it was locally available thanks to Chinese and Japanese immigrants.
Today, Pipikaula is served in Hawaiian restaurants and sometimes at luaus. It is commonly dried in wire boxes in the sun, or by hanging it to dry, then broiled or pan-fried before serving. The recipe that I'm sharing today is modeled after my wife's favorite Hawaiian restaurant, Helena's Hawaiian Food, on N. King Street in Honolulu. For efficiency's sake, we'll dry the beef in an oven and pan-fry it to a crisp.
