It's been a busy 2017 so far and we have 4 new babies all born this week at the farm. First Sweet Bella had 3 adorable puppies yesterday. They all look just like their dad, Rodie Boy (that's what we call him). You should have seen how glad he was to see her after being away all day from him. So cute!!!
Today one of our sheep gave birth to this sweet lamb and as you can see Mom and baby are doing great!

Pilars Lettuce Wraps2

What's Cooking in My Kitchen

Lettuce wraps are super easy to make and can be mixed with any sort of ingredients. I bought a large bag of Romaine Lettuce at Costco, and thought what am I going to go through all of this? Dulce suggested lettuce wraps.
My next thought was what all can we put in it? We decided on ground beef or you can use ground turkey. To try to get good fats in my diet I put avocado into anything I can. Cilantro & onions are always a great accompaniment, and then I remembered I had some chopped up organic cauliflower that I was wondering what to do with. Saute the cauliflower in some sesame seed oil, tamari sauce & fish sauce until it's cooked through and it will replace rice for a veggie, nutritious option. Next I shredded some carrots, chopped boiled eggs, and to get my daily dose of beets (chopped pickled beets from Costco) I topped them. Lastly I added some good sweet chili sauce to top it off. Now any of these ingredients can be omitted and you can add your own. Kind of the way you make a salad!
