RECIPE - Old Fashioned Potato Salad - Easy Pressure Cooker Method

Potato salad made easy by cooking the potatoes and eggs all at the same time in less than 5 minutes in one pot. And the best part no peeling the eggs. The *Fagor Multi-Pot electric pressure cooker makes this super easy, but any of our 6-8 L stove top pressure cookers will work as well.
  • 4 lbs potatoes, cut into chunks (I like to use unpeeled red potatoes)
  • 1 teaspoon salt
  • 8 - 10 eggs
  • 1 cup finely chopped celery
  • 1 cup sweet pickle relish** (I used organic Bread and Butter pickles, finely diced)
  • ½ - 1 teaspoon garlic salt
  • ½ - 1 teaspoon celery salt
  • 3 Tablespoons prepared mustard
  • Ground black pepper to taste (about ½ teaspoon)
  • ¾ - 1 cup mayonnaise
  • ¼ cup diced pimentos, optional for color (I don't typically use)  

Place about 1 inch of water in a large 6 or 8 L pressure cooker. Add potatoes sprinkle with salt.

Crack eggs into a large oven proof glass dish. Make foil strap and lower bowl into pressure cooker on top of potatoes. Close and lock lid into place.

On high heat, bring pressure up to second ring on pressure indicator. Reduce heat to medium low to maintain pressure. Cook for 5 minutes. Let pressure naturally release.

Open lid and remove bowl of eggs. Drain potatoes and return to pot. Allow eggs and potatoes to cool slightly.

Transfer potatoes to large bowl. Chop eggs loosely and add to potatoes with the remaining ingredients. Stir to combine. Serve warm or refrigerate until ready to serve.  

Makes about 8-10 servings

*It's hard to find organic sweet relish and one that does not have yellow dye #5. So I used finely diced organic Bread and Butter pickles. I really liked the flavor better than sweet relish - not as sweet as relish and the flavor was not overpowering. The Veggichop (item # 01275) does a great job of turning the pickles into relish.  

*The Fagor Multi-Pot is a pressure cooker, slow cooker, rice cooker, yogurt maker all in one convenient electric pot. Also allows you to simmer and brown meat right in the pot and it even has a 6 hour time delay and a keep warm setting. People that have them love them!

Sue will show you the basics of making jams and jellies with less sugar, honey or no sugar, using Pomona Pectin.  Sampling will begin with jelly on a warm English Muffin with butter. 

But, jelly isn't just for spreading on bread!  You will be sampling Sangria Jelly with crackers and garlic cheese, and Meatballs with Wine Jelly Chili Sauce.  Great summertime appetizers or snacks!

We will introduce you to the world of milling your own grains and making all your own breads.  We will start from "scratch" and discuss all the necessary baking ingredients and types of wheat and equipment needed to make this lifestyle change not only possible but doable!

We will demonstrate milling flour, mixing quick breads, kneading bread dough, either by hand or machine, shaping the dough, making quick cereals, and even tortillas.

And best of all - you get to taste everything we make!!  We will demonstrate the Wonder Mill, NutriMill, Bosch Kitchen Machine, the Ankarsrum Original mixer, Zojirushi Bread Machine, Tribest Personal Blender, and the ChefPro Tortilla press.

Lots of information presenting the endless possibilities of baking with whole grains.

NOTE: If you already own a copy of our "Recipe Collection" (the RED cookbook), it would be a good idea to bring it to take notes and mark-up some recipes with helpful information you will hear in the class.  If you don't have a copy (or forget to bring one), we do have plenty for sale in the store!

We are excited to welcome Denise Rogers back to our classroom at Bread Beckers. A longtime friend, employee and class presenter here at Bread Beckers, Denise took a few years off to go to culinary school. We are so happy to have Denise back to share her culinary expertise with us all!

This class is designed to be as "hands on" as possible, and allow time for any questions you may have about baking bread.  Learn the ins and outs of kneading dough, including what the dough looks and feels like when it is ready to rise.

Get tips and advice from a baking veteran, and practice shaping dough into loaves and dinner rolls.

This class is a great opportunity to see how to use equipment such as the Ankarsrum Assistant, WonderMill, and the Zojirushi Bread Machine.

Co-ops are a great way to get your grains and other supplies that are just too expensive to ship any other way.  Current co-op shipping rates range from 12 cents to 15 cents per pound (depending on distance from our warehouse) when we deliver on our own truck, compared to UPS rates that can be around 60 cents a pound!
