Farmer's Foreword

Fall is just around the corner!  Kids are starting back to school next week in some counties and the summer CSA season will end next week here at Cane Creek Farm. We are preparing for planting the crops that will produce late fall and winter right now.

The days have gotten drier, as the almost daily downpours are not lasting as long.  The drier conditions have improved the crops we do have in the ground, and allowed us to plant a succession crop of beans, cucumbers and squash. We will try to protect them from the insects with floating row cover. Insects are more of a problem in the late summer season.

 
Fall season starts August 8/9, two weeks from today.  Those of you who enjoy the fall crops of eggplant, peppers, okra, more tomatoes, field peas, garlic, potatoes, onions, butternut squash and greens toward the end of the season are invited to join our community as a shareholder for the fall. You can sign up on line through the website, www.canecreekfarm.net or bring a check by the farm.

Thanks to all of you who have encouraged, appreciated, shared and enjoyed the food this summer season.  It has been challenging at times and we appreciate your dedication to supporting our farm and allowing us to continue to produce good, chemical-free, fresh food for our community!
 
Join the Canning 101 Class @ The Mercantile Co.! 
Date: - Saturday, August 12, 2017 
Time: 2:00 PM - 5:00PM
Instructor: Jessica McGuire


Come and learn the basics about Small Batch Canning. Methods include water bath, steam and pressure ; using 3 different tomato recipes. This is a hands-on food preservation workshops. The price of the class includes multiple recipe variations and instructions with the opportunity to make 3 of the recipes. All ingredients, packing supplies and handouts are included in the price of the class. 
Produce will be provided by Cane Creek Farm LLC & refreshments will be provided. 
Space is limited and preregistration is a must.

Tomato Pie

  • 1 9 inch pie shell – pre-bake 8-10 minutes
  • 4-5 tomatoes, peeled and sliced
  • 2 cups  cheddar cheese, shredded
  • ½ cup of chopped onion
  • ¼ cup sliced basil
  • ½ tsp salt
  • ½ cup of mayonnaise
     
  1. Salt the tomatoes lightly and let them drain in a colander for 15 minutes. Squeeze as much moisture out of the tomatoes by patting with towels.
  2. Scatter the onion on the bottom of the crust.  Layer the tomatoes and basil on top of onions.
  3. Mix together the mayonnaise and cheese and layer on top.
  4. Bake at 350 degrees anywhere from 25-35 minutes, until browned on top.
