The International Agency for Research on Cancer (IARC), a division of the World Health Organization (WHO), classifies processed meat as a Group 1 carcinogen (World Health Organization, 2015a). This places processed meat in the same category as tobacco. Although unproven, the IARC (and the general public) speculates that the nitrates and nitrites in processed meat are the cancer-causing agents. Is there reason to be concerned? ...
"We have gone through at least 6 bags of these shrimp in recent months and they have been very good...highly recommend them! They are big enough where they don't fall through the openings on our grill or smoker. Also have cooked them with olive oil and veggies, boiled with pickling spice or cooked in butter and garlic - all came out great!"

These cattle are on a modern day cattle drive to a new paddock. The lead animal has been on the farm for two years and leads the group daily. The legendary cattle drives in the 1800's always had a lead animal.
The cattle on the left were moved to the picture above. This field was seeded to mixed forages in April, and in spite of dry summer, the forage is a tall as the cattle. Contentment is the order of the day!
